Roasted Red Pepper Hummus

This spin on classic hummus has the addition of sweet roasted red pepper for flavor and color. Spice this up the way you like it: add more hot sauce, cumin or other spices to make it just right.

Ingredients

  • 1 cup (5 1/2 oz./170 g) jarred roasted red peppers
  • 1/2 cup (4 fl. oz./125 ml) water
  • 2 Tbs. extra-virgin olive oil (optional)
  • 1/2 cup (2 1/2 oz./70 g) sesame seeds, toasted
  • 1 lemon, peeled
  • 2 garlic cloves
  • 1 tsp. hot sauce (optional)
  • 3 cups (14 1/2 oz./450 g) canned chickpeas, drained
  • 1 tsp. cumin seeds or ground cumin
  • 1 tsp. salt (optional)
  • ½ tsp. freshly ground pepper

Directions

In a Vitamix blender, combine all the ingredients and secure the lid.

Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades. Makes about 27 oz. (840 g).
