Lemon Curd

The perfect filling for lemon bars or serve it chilled on top of your favorite dessert.

Ingredients

  • 1/2 cup (4 fl. oz./125 ml) fresh lemon juice
  • 5 large eggs
  • 1 1/2 cups (12 oz./300 g) sugar
  • 1/8 tsp. salt (optional)
  • 3 Tbs. lemon zest
  • 1/2 cup (3 3/4 oz./115 g) unsalted butter, cut into small pats

Directions

In a Vitamix blender, add the lemon juice, eggs, sugar, salt and zest and secure the lid.

Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds.

Reduce speed to Variable 5 and remove the lid plug.  Add the butter, 1 piece at a time, through the lid plug opening, incorporating the butter completely between additions.

Replace the lid plug and increase the Vitamix to its highest speed.  Blend for 30 seconds. Pour warm over fresh fruit or chill to allow the curd to set. Makes about 3 3/4 cups (30 fl. oz./960 ml).
