Caesar Salad Dressing
A classic dressing with tangy flavors and creamy consistency made without preservatives.
Ingredients
- 6 large egg yolks
- 3 Tbs. red wine vinegar
- 3 garlic cloves
- 1/3 cup (3 fl. oz./80 ml) fresh lemon juice
- 4 anchovies
- 1 tsp. dry mustard
- 1 cup (4 oz./125 g) grated Parmesan cheese
- 1 cup (8 fl. oz./250 ml) extra-virgin olive oil
- 1 tsp. salt (optional)
- 1/2 tsp. freshly ground pepper
Directions
In a Vitamix blender, combine all the ingredients and secure the lid.
Start the blender on its lowest speed and quickly increase speed to its highest speed.
Blend for 25 to 30 seconds or until smooth. Makes about 1 2/3 cups (13 fl. oz/400 ml).
