Giada's Lemon Ricotta Cookies

Deliciously light and tender, bursting with bright citrus flavor, these rich golden cookies are easy to make thanks to our custom mix, crafted using the signature recipe of Giada De Laurentiis, award-winning Food Network star and best-selling cookbook author. Prep is easy: all you need to add are butter, an egg and fresh ricotta cheese.

Ingredients

  • 4 Tbs. (1/2 stick) (2 oz./60 g) unsalted butter, at room temperature
  • 1 package Giada’s Lemon Ricotta Cookie mix (includes sugar, cookie and glaze mixes)
  • 1 large egg
  • 3/4 cup plus 2 Tbs. (7 1/2 oz./212 g) ricotta cheese

Directions

Preheat an oven to 375°F (190°C). Line 2 baking sheets with parchment paper.

In the bowl of an electric mixer fitted with the flat beater, beat the butter and sugar mixture together on medium speed until light and fluffy, about 3 minutes. Add the egg and ricotta and beat until incorporated, scraping down the sides of the bowl as needed, about 1 minute. Reduce the speed to medium, add the cookie mix and beat on medium speed until combined,
about 1 minute.

Using 2 rounded tablespoonfuls of dough for each cookie, scoop the dough onto the prepared baking sheets, spacing the cookies at least 2 inches (5 cm) apart. Bake until the cookies are slightly golden at the edges and set in the center, 12 to 15 minutes. Transfer the baking sheets to wire racks and let the cookies cool completely on the baking sheets.

To make the glaze, in a small bowl, stir together the glaze mix and 1 1/2 Tbs. water until smooth and glossy. Spoon about 1/2 tsp. of the glaze onto each cooled cookie and use the back of the spoon to spread the glaze to the edges. Let the glaze set for about 2 hours before serving. Makes about 20 cookies.
