Cherry-Vanilla Smoothie

If you make this refreshing treat in summer, when plums and nectarines are at their peak of ripeness, you probably won’t need to add any sweetener to this cheerfully colored smoothie. If, however, your stone fruit is on the tart side, add a small amount of honey (or agave nectar, if you prefer) to taste.

Ingredients

  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 plum, pitted and coarsely chopped
  • 1 nectarine, pitted and coarsely chopped
  • 1/2 cup cherries, pitted
  • 1/2 tsp. vanilla extract or seeds from 1/2 vanilla bean
  • 2 cups (250 g) ice cubes
  • Honey, to taste

Directions

In a Vitamix blender, combine the orange and lemon juices, plum, nectarine, cherries, vanilla and ice cubes. Puree, slowly increasing the blender speed to high, until smooth, 1 to 2 minutes. Add honey to taste if desired and puree briefly to combine. Divide between 2 glasses and serve immediately. Serves 2.
