25-Year Barrel-Aged Balsamic Vinegar

Twenty-five years of aging gives this balsamic vinegar from Modena, Italy, its intense flavor. To make it, grapes are slowly cooked in copper cauldrons, combined with older balsamic vinegar to help speed acidification and transferred to oak barrels, which infuse it with the wood's aroma.
