Barbecue Baby Back Ribs

To make the barbecue sauce, in a large, heavy saucepan over medium heat, warm the bacon drippings. Add the onion and garlic and sauté until softened, about 5 minutes. Stir in the ketchup, Worcestershire sauce, wine, lemon zest and juice, brown sugar, mustard, chile powder, cumin, celery salt and 1/2 tsp. salt. Bring to a simmer, then reduce the heat to low and cook very gently, stirring occasionally to prevent scorching, until slightly thickened, about 12 minutes. Stir in the Tabasco and taste for seasoning. Use right away, or preferably let cool, cover and refrigerate for at least 24 hours before using.

Preheat the broiler. Trim the membrane from the back of each rack, then cut into individual ribs. Arrange the ribs on a rack set in a rimmed baking sheet. Broil, turning once, until browned on both sides, 10 to 12 minutes.

Transfer the ribs to a slow cooker, add the barbecue sauce and turn the ribs to coat evenly. Cover and cook on the low setting for 5 to 6 hours. The ribs should be very tender.

About an hour before the ribs are done, in a large bowl, whisk together the lime juice, sour cream, mayonnaise, salt, chile powder, sugar and cilantro. Add the fennel and apples and toss to mix. Cover and refrigerate for 1 hour before serving to allow the flavors to marry.

Using a slotted spatula, transfer the ribs to a large platter and keep warm. Pour the sauce into a small saucepan, let stand for few minutes, and skim away the fat from the sauce with a large spoon. Bring to a boil over high heat and boil rapidly to reduce and thicken slightly, 3 to 4 minutes.

Arrange the ribs on warm individual plates and drizzle with some of the reduced sauce. Mound the slaw alongside the ribs and serve immediately. Serves 6.

  • Rated 5 out of 5 by from Long lasting I purchased this grinder 11 years ago or longer. It has lasted through 8 coffee brewers. We go through 10 Lbs of coffee beans a month with this grinder. Great buy!!

Rated 1 out of 5 by from Buy only if you want to replace annually I bought this and after about a year, the plastic arms that hold the blade cracked and broke in half. So I bought another one, and again after about a year, the same cracking has happened. I don't know what I was thinking buying this a second time, but I will not buy it again!

Rated 1 out of 5 by from suddenly stopped working! I purchased this a few months ago and literally use it once a month for 3-5 minutes to grind coffee beans. Yesterday after using it for a few minutes. it simply stopped working. I thought it overheated and waited overnight to test it again....dead. I pulled out a n old Braun Grinder which has slightly less capacity and it worked perfectly. Do not waste your money on this unless you want to purchase 2 or three for back up Unreliable and cheaply made

Rated 5 out of 5 by from Very good grinder Bought this grinder in 2006 for my daughter. She took it to college with her. We use it because it doesn't make a mess. Until a couple of days ago it was running great and then it just stopped. I'm back to buy another one. We cold brew in the Summer so we use it a lot. The grind is perfect. You make your own course or fine grind and it is perfectly fine for espresso just don't fill the container to capacity for a very fine grind.

Rated 4 out of 5 by from Beautiful piece - 6 years and still going I bought this years ago in Seattle, to grind my coffee beans - about 2-4x every week. Writing to counter the other bad reviews. It's a handsome coffee grinder, reasonable noise level, light, easy to store. I love the measure lines on the inside. I only make 8 "cups" coffee in my french press for the two of us, so volume is not an issue. But as I'm learning more about coffee - I do notice now that the grinds are a bit uneven, which can affect the bitterness of the coffee. Also, no, it will not make fine espresso grind. It may be a function of the 6 yr old blades, but I think I will get a burr grinder next, now that I've got more income. If you're looking for a sleek, functional, well-priced item - this is for you!

Rated 5 out of 5 by from Great and Long Lasting! I really don't know why there are negative reviews. I've had mine for over 6 years and it works perfectly every time. I like grinding my own beans and feel my coffee tastes fresher because of it. I don't like to use the ones in the stores as I feel you might get some of the previous beans that were used before in your bag. The only negative is that I like to grind about half the can or bag at a time and the container is fairly small, so it takes a little time. I think cleanup is quick and very easy. I have also used it to grind nuts.

Rated 1 out of 5 by from Low quality product Extremely disapointed with this prodiuct: 1. Rather big and bulky for a small stand-alone grinder. 2. I purchase it with intent for espresso grind but all I was able to get was a coarse french press grind (no adjustment for the coarsness/low power) 3 IT BROKE AT THE FIRST USE!!!! Serioulsy. I grind one cup of coffee beans and was trying to grind another one next and it broke! Very poor quality.

Rated 4 out of 5 by from A good blade grinder I've never had a problem with this grinder. It looks good with my Cuisinart coffee maker, as it shares the same design profile. It grinds the coffee appropriately for the filter, and I never have a problem with the taste of the brew. I clean the grinder bowl and the cover with my finger after each use, and have never had an issue with grinds flying all over the place. In short, this is a well crafted blade grinder, but you won't necessarily get the same consistency of grind as you would with a good burr grinder. But you're paying substantially less than the $150+ you would for a good burr grinder.
