- More about Mauviel
In 1830, Ernest Mauviel established his namesake cookware company in Villedieu-les-Poêles in Normandy. The village had a long history of outstanding metalwork; the locals were considered experts in the craft. Today, much of the manufacturing is still done by hand using traditional processes passed down through generations of copper makers. True to France’s rich culinary history, Mauviel 1830 is a favorite in professional kitchens, where copper’s quick, even heat conductivity is essential for making delicate sauces and other French classics. Mauviel now also offers stainless-steel collections crafted with the same attention to detail as its traditional copper cookware.
Rated 4 out of 5 by jerp from Very nice pan! I bought this 10.2 inch pan during the sale. I was worried about the copper only being 1.5 mm thick, but it holds up nicely. It is very responsive to heat although it took longer to cool down than I expected. This is my first copper pan and I make curries in it as it holds about 4 servings at a time. I do wish the sides were higher, but I guess I'll have to buy a sauté pan for that luxury. Overall it was a great buy and I would recommend it to anyone who wants an affordable way to start out with high quality copper. I did note that the SS lining did discolor more than I am used to but it's a minor factor.Date published: 2015-07-14
