Food-Processor Pizza Dough

Mixed in a food processor, this dough comes together quickly. Be sure to check the expiration date on the yeast; if it is outdated, the dough will not rise properly.

Makes two 12-inch rounds.

Ingredients

  • 1 Tbs. active dry yeast
  • 1 tsp. sugar
  • 1 cup warm water (105° to 115°F)
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 2 Tbs. extra-virgin olive oil

Directions

In a small bowl, dissolve the yeast and sugar in the warm water and let stand until foamy, about 5 minutes.

In the bowl of a food processor fitted with the dough blade, combine the flour and salt and process with 3 or 4 pulses. With the motor running on the dough speed, slowly add the yeast mixture, allowing each addition to be absorbed before adding more. Continue processing until the dough forms a ball and cleans the sides of the bowl, about 1 minute, then process for 1 minute more.

Coat the inside of a large bowl with the olive oil and place the dough in the bowl. Cover with a clean kitchen towel and let the dough rise in a warm place until doubled in size, about 1 1⁄2 hours. Divide the dough in half and roll out as directed in the pizza recipe.
Makes two 12-inch rounds.

Rated 4 out of 5 by from It's a good recipe I've used this basic recipe for decades but have moved up with using 00 Flour, honey instead of sugar, adding diastatic malt, etc. cold rising over 24 hours using poolish starter, etc. I make 16" NY style and large Sicilian sheet pizzas.

Rated 5 out of 5 by from This is my go to pizza crust recipe I found this recipe and Williams-Sonoma when I purchase a Cuisinart pizza oven. This is the best crust and if you do not use a lot of toppings, you will be extremely happy and how fast it comes together. Use parchment paper for first few min with a light sprinkle of cornmeal. Voila!

Rated 5 out of 5 by from Does the dough freeze well? Anxious to try especially given the great reviews! I have early generation food processor(14 cup). Do not have dough blade. I do have the one in the advertisement of the recipe(steel blade). Would that suffice? Thank you!

Rated 5 out of 5 by from Great easy dough Some comments complain about not enough water. A while back I watched the black and white Julia Child TV show. One show she demonstrated how to measure a cup of flour. She shifted the flour into the cup then leveled off the top. Do not scoop or pack flour into the cup, too much flour and insufficient liquid.

Ive used it three times now and Im very happy with the results. I roll it out very thin - yes, it seems to take a smidge more water but I understand that is probably because of the humidity and not the user. Then I read pizza dough can be used to make cinnamon rolls...who knew. My grandson says Im the best cooker. #winning
