With a dish as simple as osso buco – a classic Italian braise of veal shanks, wine, stock and vegetables – the veal itself needs to be of the highest quality. Our USDA Prime milk-fed veal shanks are exceptionally meaty around the bone, resulting in a dish with a rich flavor and meltingly tender texture. The veal is hand selected and cut to order for us by Strassburger, a 150-year-old family-owned New York butcher that supplies some of the country’s top steakhouses and restaurants.

- The osso buco veal shanks ship frozen with ice packs. Upon receipt, place the shanks in the refrigerator or freezer for a later date. They will keep refrigerated up to 3 days unopened and up to 3 months frozen.
Proper thawing technique
- Remove the meat from the freezer and thaw in the refrigerator overnight. To retain more of the natural juices, leave the meat in its original packaging while thawing. It is normal for natural juices to accumulate. Simply pat dry with paper towels before cooking.
Please allow up to two weeks for processing and delivery of perishable items, which are shipped overnight to ensure freshness. Perishable items are not eligible for rush shipping.

Rated 4 out of 5 by NancyEF from LUCKY STILL GOOD. This is delicious meat. We were sent this meat, along with the Osso Buco Sauce as a Christmas present. The sauce arrived on Christmas Eve, and the meat the day AFTER Christmas - and definitely NOT frozen. I know UPS and FedEx had problems, but sur4ly food items should have been given priority. Fortunately the ice bags were still cool, so we immediately put the meat in the refrigerator and fixed osso buco for dinner. They cooked well, and we did enjoy a delicious meal. Since there are only two of us, I plan on another delicious meal tomorrow.Date published: 2013-12-29
