Recipe: Tomato Salsa
A kitchen torch makes fast work of blackening the skins of fresh tomatoes. After they have cooled, peel off the skins and dice the tomatoes to use in this piquant salsa.

Give classic crème brûlée its signature caramelized topping using our kitchen torch – a compact version of the ones used by pastry chefs. Its adjustable flame quickly melts sprinkled sugar into a brittle caramelized crown while leaving the custard beneath cool and creamy. The torch also comes in handy for melting grated cheese and browning meringues and the tops of tarts. It operates with a standard butane canister (not included, but readily available at Williams-Sonoma or local hardware stores). A built-in gauge displays the fuel level.
