From his native Brittany, this classic Breton “butter cake” relies on layers of handmade puff pastry dough to create a decadent treat with a sweet, buttery center and crisp caramelized-sugar coating. Receiving Instructions

  • The kouign amann was shipped frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt, immediately place the kouign amann in the freezer, where it will keep up to one month frozen.

Preparation

  • Lightly spray the inside of each mold with nonstick cooking spray and place a kouign amann in each mold. Place the molds on a baking sheet and cover with a piece of parchment paper. Let the kouign amann rise in their molds at room temperature for 8 to 10 hours.
  • Preheat an oven to 350ºF.
  • Remove the parchment paper. Transfer the baking sheet to the oven and bake the kouign amann in the molds until slightly puffed and golden brown on top, 30 to 35 minutes. Let cool for 5 to 10 minutes before serving. Makes 8 kouign amann.

  • Enriched flour (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid, enzyme, ascorbic acid [dough conditioner]), butter, sugar, water, yeast, salt, dough conditioner blend (wheat flour, malted barley flour, ascorbic acid [dough conditioner], enzymes).

I placed an order in late November and when I took them out of the freezer, they looked freezer-burned. They didn't rise at all and were hard disks when they came out of the oven. I thought maybe UPS had allowed them to thaw on the truck (the dry ice was intact, though) so I I placed another order. The second order was worse! Bad product!

I followed the directions, exactly as it was written, and rested it for 10 hours. These pastries did not rise at all, and were just as flat after 10 hours of "rising." They didn't change at all after I baked them. Don't know if it was a bad batch. Huge disappointment, and definitely not worth the price.

    Rated 5 out of 5 by from You have to get 2 boxes! Seriously, the aroma wafts thru the air and people show up at your door. Follow the prep instructions provided for best results, I go for maximum bake time for crustiest exterior. I've found them locally but to get to those places takes time I prefer using elsewhere, having these in the freezer are handy, and if I might suggest "bribe" worthy, if I have to explain you don't know how. Prepare a pot of coffee or steep tea as this bakes, everyone invited will appreciate it, even the inquisitive ones who show up asking, "what smells so good?" You can eat leftovers the next day but why make so much, when you can make it fresh the next morning?

    Rated 1 out of 5 by from a frozen easter I sent this as a gift but without instructions on the outside of the package, the little pastries were unbaked on Easter morning. Apparently, they needed to not only be defrosted but they needed to rise for 8-10 hours. Simple instructions on the OUTSIDE of the box would have been more than just helpful. B in CA

    Rated 4 out of 5 by from Delish...but These are absolutely delicious. However, it would be nice if the package indicated that it should be laid flat in the freezer. In order to save space in the freezer I had this (and a LOT of other stuff) sideways in order to pack the freezer during the holidays. I didn't realize that there was a not-completely-frozen topping on these and it oozed out of the box a bit. Of course, that didn't keep us from enjoying them tremendously!!

    Rated 5 out of 5 by from Sinfully decadent treat! I saw these on a television food show several years ago, and was always curious about them. I decided to give them a try, and it was love at first bite. They remind me of my favorite buttery and flaky croissant. Although a tad sweeter, they make for a wonderful breakfast with coffee. I especially love the buttery crunchy bottom. I highly recommend this yummy pastry.
