Crafted by artisan cheesemakers in the Lombardy and Piemonte regions of Italy, this Gorgonzola is cave-aged for a minimum of 90 days by Guffanti Formaggi, a family company that has been aging Gorgonzola in an abandoned mine in Valganna, Italy, for more than a century. Traditional cheesemaking techniques and careful tending produce Gorgonzola with beautiful marbling, intense flavor and a dense, creamy texture.
