- Butterflied Chicken with Lemons
Preheat an oven to 450°F (230°C).
If the giblets are in the chicken cavity, remove them and reserve for another use or discard. Lay the chicken skin side up in a roasting pan large enough to hold it comfortably. In a small bowl, whisk together the olive oil and fennel seeds. Rub the chicken all over with the oil mixture. Squeeze 1 lemon half over the chicken and sprinkle with 1 tsp. salt and several grinds of pepper. Cut the remaining lemon half into small pieces and sprinkle them over and around the chicken along with the garlic cloves.
Roast the chicken for 20 minutes. Reduce the heat to 400°F (200°C) and roast until the skin is browned and an instant-read thermometer inserted into the thickest part of the thigh away from the bone registers 170°F (77°C), about 40 minutes longer. Transfer to a carving board and let rest for 10 minutes.
To serve, using clean poultry shears or a chef’s knife, cut the chicken into 10 serving pieces (2 legs, 2 thighs, 2 wings and 4 breast pieces). Transfer to a warmed serving platter and spoon the pan juices, including the garlic and lemon pieces, over the chicken. Serve immediately. Serves 4.

Rated 1 out of 5 by InChef from Dies after a few uses I used it to grind Indian spices (cumin, coriander). On a later use (Probably the 4th in 6 months), the unit smelled of burning electric and died. We returned it to William Sonoma and received a new one as it was under a 1 year warranty. The new unit was sued sparingly:one every 3 months with only alight load of spices and frequent stopping to avoid any chance of over heating. Despite all these "babying", the unit ceased working after probably only 4 or 5 grindings in 2 years. We wrote to Cuisinart and was told that the unit was no longer under warranty. When I complained that the grinder was a poor quality machine and I would give it a negative review, they offered to replace it if I could produce a receipt that the unit was less than 3 yrs old. I couldn't find the receipt and took the loss. I just wanted to let anyone wishing to use it to grind Indian spices: don't waste your money on this poor Made in China machine. And since I bake a fair bit, I needed something that could chop nuts evenly as well. When I saw this pop up in the recommendations, I was ecstatic, and purchased it right away. Alas, it does not work well. My spices ended up with a very uneven grind. As for the nuts... a very small amount, sure. Anything more than, say, 10 nuts, it just doesn't cut it. Somehow the blades manage to trap some of the nuts under them, so that as you run the machine, the nuts separate between into an oily meal packed under the blades, and huge chunks above the blades that refuse to get chopped/ground/whatever. Oh, and the entire apparatus gets kinda messy since there seems to be a bit of a gap between the bowl and dome/top... when you life the plastic dome/top, there's always some debris outside the bowl, on the machine.Date published: 2012-01-07
