Preparation Instructions
Pancakes:
- 2 cups (240g) pancake & waffle mix
- 1 egg, lightly beaten
- 4 Tbs. (60g) unsalted butter, melted
- 3/4 cup cup (185ml) milk
In large bowl, whisk together mix, egg, butter and milk until batter is almost smooth; do not overbeat. Let stand for 5 minutes.
Preheat griddle over medium heat until a few drops of water flicked onto surface skitter across it. Lightly grease griddle with vegetable oil or spray with nonstick cooking spray and wipe off excess.
Pour 1/3 cup of batter onto griddle for each pancake. Cook until bubbles form on top and batter is set, 2–3 minutes. Flip pancakes and cook until golden brown on other side, approx. 2 minutes more. Keep warm until all pancakes are cooked. Repeat with remaining batter, adding more oil to griddle as needed. Makes six or seven 5" (13 cm) pancakes.
Chocolate Chip Waffles:
- 2 cups (240g) pancake & waffle mix
- 1 egg, lightly beaten
- 6 Tbs. (3/4 stick/90g) unsalted butter, melted
- 3/4 cup (185ml) milk
In large bowl, whisk together mix, egg, butter and milk until batter is almost smooth; do not overbeat. Let stand for 5 minutes.
Preheat waffle maker according to manufacturer's instructions. Pour approx. 1/2 cup of batter onto waffle maker and cook according to manufacturer's instructions. Makes approx. five 7" (18 cm) waffles.
Chocolate Chip Belgian Waffles: Prepare batter as directed above. Preheat Belgian waffle maker according to manufacturer's instructions. Pour heaping 1/3 cup of batter into each well of waffle maker and cook according to manufacturer's instructions. Makes seven or eight 4 1/2" (11.5 cm) Belgian waffles.
