The signature pastry at Thomas Keller's Bouchon Bakery in California's Wine Country is the little chocolate cake known as a bouchon, from the French word for a cork. Baked in cork-shaped molds with chocolate chips in the batter, then dusted with confectioners' sugar, bouchons are Keller's own creation. Using this premium mix developed exclusively for Williams-Sonoma, you can easily enjoy their rich, buttery chocolate flavor and delicate texture warm from the oven. The mix combines Guittard cocoa powder, Nielsen-Massey pure vanilla and a generous helping of Callebaut chocolate chips, yielding enough batter for two dozen bouchons.
