What Are Springform Pans?

Springform pans are a special kind of cake pan, designed to eliminate the final step of trying to wriggle a cake out of its pans after baking. While with many cake recipes, this is no big deal, other recipes require an easier release in order to enjoy the cake in one piece.

  • The pan consists of a plate and a ringed wall. The ring is just a little bit smaller in diameter than the plate.
  • A ridge in the circumference of the plate allows the ringed wall to rest inside it snugly, so that cake batter doesn't slide or drip out while moving the pan or baking in the oven.
  • Along the sides of the ring are one or two buckles. These are the springs. Snap them shut to tighten the ringed wall around the plate. Fill the entire pan with batter and bake. Then, once baked, release the snaps and the walls of the pan remove cleanly.
