What Is a Santoku Knife?

A santoku is a Japanese version of the chef's knife. It's a general-purpose kitchen knife similar to the chef's knife but often shorter, thinner and more agile.

  • Santoku knives have a flatter edge and sheepfoot tip. This allows for forward or backward strokes, or a straight up and down chop.
  • They can be single (one-sided) or double (both sides) beveled.
  • They have a balanced weight and are lighter to hold.

How to Care For Your Knife Set

  • Knife sharpeners grind off bits of the blade to produce a new, sharp edge. It can be done using a water stone, whetstone, or electric knife sharpener.
