Sweet Potato Chowder
Our exclusive soup starter is made of a savory blend of pureed sweet potatoes, roasted corn, bell peppers leeks and carrots simmered with garlic, thyme and a hint of spicy sriracha. All you have to do is combine it with broth, simmer and serve, although here we have dressed it up with a pretty swirl of crème fraîche and sprinkling of crunchy pepitas.
- 1 jar sweet potato chowder starter
- 2 cups (16 fl. oz./500 ml) vegetable or chicken broth
- Crème fraîche for garnish (optional)
- Pepitas for garnish (optional)
In a large saucepan over medium-high heat, combine the chowder starter and broth. Bring to a simmer and cook, stirring occasionally, until the soup is heated through. Divide the chowder among 6 individual bowls. Swirl a spoonful of crème fraîche into each bowl, sprinkle with pepitas and serve immediately. Serves 6.
