
Sauternes and Lemon Honey Granita
This simple yet elegant dessert makes a refreshing ending to a meal, and it’s ideal for entertaining because you can prepare it in advance. For a beautiful presentation, garnish with edible flowers.
Ingredients:
- 6 Tbs. honey
- 1 1/2 cups (12 fl. oz./375 ml) water
- 1 bottle (750 ml) Sauternes
- Grated zest and juice of 1 lemon
- Edible flowers for garnish (optional)
Directions:
In a saucepan over high heat, stir together the honey and water. Bring to a boil, reduce the heat and simmer, stirring occasionally, until the honey has completely dissolved. Once the mixture has returned to a boil, remove from the heat and let cool. When the mixture has cooled completely, stir in the Sauternes, lemon zest and lemon juice.
Pour the mixture into a shallow freezer-safe container. Freeze for about 1 hour, then, using a fork, scrape and stir to break up the ice crystals. Return the granita to the freezer until firm, 8 to 12 hours, occasionally scraping and stirring with a fork.
To serve, spoon the granita into chilled small glasses or bowls, garnish with edible flowers and serve immediately. Serves 6 to 8.
