Combining thick, golden waffles with a rich praline topping, this dish is perfect for a weekend brunch.

Ingredients:

  • 3 eggs, separated
  • 1 1/2 cups buttermilk
  • 8 Tbs. (1 stick) unsalted butter, melted
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. ground cinnamon
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. plus 2 pinches of kosher salt
  • 3 Tbs. granulated sugar
  • 1 cup firmly packed dark brown sugar
  • 1/2 cup maple syrup
  • 8 Tbs. (1 stick) unsalted butter, cut into cubes
  • 1 cup roughly chopped toasted pecans

Directions:

Have all the ingredients at room temperature. Preheat an oven to 200°F. Preheat a Belgian waffle maker according to the manufacturer’s instructions.

In a large bowl, whisk the egg yolks. Whisk in the buttermilk, melted butter and vanilla. Over a sheet of waxed paper, sift together the flour, cinnamon, baking powder, baking soda, the 1/4 tsp. salt and the granulated sugar. Add the flour mixture to the yolk mixture and whisk until smooth.

In another bowl, beat the egg whites until stiff peaks form. Using a rubber spatula, fold half of the egg whites into the batter, then fold in the remaining whites. Cook the waffles according to the manufacturer’s instructions. Transfer to a baking sheet and keep warm in the oven.

In a fry pan over medium-high heat, combine the brown sugar, maple syrup, butter and 2 pinches of salt. Heat the mixture, stirring when the butter begins to melt. Continue to cook, stirring, until the syrup is smooth, about 4 minutes, then stir in the pecans. Remove from the heat and spoon the syrup over the waffles. Serve immediately. Serves 8.

Rated 5 out of 5 by from Christmas morning special my boys bought me a waffle maker for Christmas years ago so that is our special treat every christmas. i found this recipe a few years ago, and it is clearly the winner! i usually add a few pecans to the iron before i pour in the waffle mix, but make the syrup as well. excellent special occasion dish and goes well with good bacon

Rated 5 out of 5 by from wonderful waffles I must confess that I didn't wisk the egg whites before adding them to the batter the last time I used this recipe and my waffles still turned out perfectly. I like the amount of sugar and cinnamon called for, it is not too much. You may enjoy a small grating of nutmeg also, as I do. The topping is very sweet, as others have commented, but so is plain maple syrup. My waffles cook up perfectly in my All Clad waffle iron. I love the heat adjustment dial. I like to make a batch and freeze them, slightly undercooked. That way I can just pop them in them in the toaster,or toaster oven, still frozen, for a quick meal anytime.

Rated 5 out of 5 by from Perfect waffles After much searching, I found this recipe. It is amazing. Makes light, fluffy waffles. I used this for making waffles only--have not made the topping. I have a waffle iron that makes 4 square waffles. This recipe was enough for 10 (4 1/2 in) waffles.

My husband and kids devour these faster than I can make them and they freeze and reheat fabulously, great for those crazy mornings at our house. I love that these waffles are moist in the inside and the outside is light and crispety. Just delicious. My confession however is that I have not made the praline with it yet, neither my kids nor husband care for the nuts much, I will make that for me sometime soon though. Nonetheless, I believe the star in this recipe are the waffles for certain!

Rated 5 out of 5 by from Saturday morning waffels! This is a good and easy recipe. I can't wait to make them again. My husband and kids all had seconds. Even though the recipe doesn't call for it I always make fresh whipped cream when I make waffles. Heavy cream, vanilla extract, and powdered sugar is all you need. It's perfect with these waffles. Highly recommended!!!

Rated 5 out of 5 by from Absolutley Fabulous! I cook a lot and make a lot of new recipes. I vary rarely give anything 5 stars, but these waffles are that good. The crust is crispy and the interior soft. There is just enough cinnamon. The syrup is the best. This is easy enough to make for two and good enough to serve for company. I will definitely repeat tis one.
