
Multi-Cooker Citrus Marmalade
At their peak in winter, Meyer lemons are prized for their floral fragrance and sweet flavor. Here, they’re transformed into a delicious marmalade, which is a snap to prepare in the Philips multicooker. Try serving it on toast, scones or biscuits.
Ingredients:
- 1 lb. (500 g) Meyer lemons, thinly sliced and seeds removed
- 2 cups (1 lb./500 g) sugar
- 1/4 cup (2 fl. oz./60 ml) water
- 1 vanilla bean, split in half
Directions:
In a Philips multicooker, combine the lemons, sugar, water and vanilla bean. Set the multicooker on the boil/steam setting and set the cook time to 20 minutes. Close the lid and cook for 5 minutes, then open the lid for the remaining cook time.
Transfer the marmalade to a bowl and let cool to room temperature before serving. Remove and discard the vanilla bean. The marmalade can be stored in the refrigerator for up to 2 weeks. Makes about 2 cups (20 oz./625 g).
