Buttermilk adds a pleasing tang to these dessert bars, which derive their lemony taste from grated lemon zest and fresh juice.

Ingredients:

  • 6 Tbs. (3/4 stick) unsalted butter, at room temperature
  • 1/4 cup plus 2/3 cup granulated sugar
  • 2/3 cup plus 2 Tbs. all-purpose flour
  • 1/8 tsp. salt
  • 2 eggs
  • 1 Tbs. finely grated lemon zest
  • 1/3 cup fresh lemon juice
  • 1/2 cup buttermilk
  • Confectioners’ sugar for dusting

Directions:

Mix the dough and bake the crust
Preheat an oven to 350°F. Butter the bottom and sides of an 8-inch square baking pan.

In a large bowl, using an electric mixer, beat together the butter and the 1/4 cup granulated sugar on medium speed until creamy. Reduce the speed to low, add the 2/3 cup flour and the salt and beat until blended. Spoon the dough into the prepared pan and press evenly into the pan bottom. Bake until the crust is golden, 15 to 18 minutes.

Make the filling
Meanwhile, in a large bowl, using an electric mixer, beat the eggs and the remaining 2/3 cup granulated sugar on medium speed until blended. Add the remaining 2 Tbs. flour, the lemon zest, lemon juice and buttermilk and beat until smooth. Pour the filling over the baked crust, spreading evenly.

Bake the filling
Bake until the top of the filling is set and barely browned at the edges, 20 to 25 minutes. Transfer the pan to a wire rack and let cool completely. Cut into 8 bars, dust with confectioners’ sugar shaken through a sieve and serve. Makes 8 bars.

Rated 5 out of 5 by from Need to Really Like Lemon This recipe is VERY lemony. I made it for a casual night with friends. Everyone loved it. But, there's not much that's sweet about it. If you aren't a true lemon fan, I would recommend cutting back a bit on the fresh lemon juice.

Rated 5 out of 5 by from Delicious! This is the first homemade lemon bar recipe I've made and they were delicious. They were also very easy to make. I'll definitely be making these again. I cut mine into 16 bars and they were still a decent size.

Rated 5 out of 5 by from Easy and delicious! Wow, what great lemon bars. I've been looking for a good recipe for awhile and these definitely take first place. They are easy and quick to make. The crust is buttery but not too sweet, and the lemon filling is not too sweet and not too sour. I will definitely be making these again!

Rated 5 out of 5 by from DELICIOUS! My husband and I had a recipe that called for buttermilk, we had some leftover that I was trying to use up when I stumbled on this recipe. To say they are great is an understatement. This is by far our favorite lemon bar recipe. I've now made it 3 times trying to use up the buttermilk and each time my husband and his coworkers say they are absolutely delicious. The Meyer lemon has a mild lemony flavor that doesn't overpower the recipe. Also, they're pretty good without the powdered sugar as well. If you've only had lemon bars out of a box recipe, I highly recommend trying this from scratch version.
