
Honey & Cardamom Frozen Yogurt
This refreshing frozen yogurt has a subtle flavor that goes wonderfully well with fresh or baked summer fruit. For the creamiest texture, eat the frozen yogurt within a day or two of making it.
Ingredients:
- 1/2 cup whole or low-fat milk
- 1/2 cup sugar
- 2 tsp. coarsely chopped cardamom pods
- 3 1/2 cups plain whole-milk yogurt
- 1/2 cup honey
- 1 Tbs. vanilla extract
- 2 tsp. fresh lemon juice
Directions:
In a small saucepan over medium heat, combine the milk, sugar and cardamom pods, and stir until the sugar is dissolved and the mixture comes to a boil. Cover and let stand at room temperature until cool, about 30 minutes. Strain into a large bowl, discarding the cardamom pods.
Whisk the yogurt, honey, vanilla and lemon juice into the milk mixture. Transfer to an ice cream maker and freeze according to the manufacturer's instructions.
Serve immediately, or transfer the frozen yogurt to an airtight container, cover and freeze until firm, about 4 hours. Makes about 1 quart.
