Cucumber, Red Onion and Dill Shaved Salad

A simple, summery cucumber salad looks more elegant when the cucumbers are peeled into long strips using a mandoline or a vegetable peeler. Mound the vegetables prettily on a small salad plate or, for maximum effect, serve them in a small clear bowl.

Ingredients:

  • 2 English cucumbers
  • 1/2 red onion
  • 3 Tbs. chopped fresh dill
  • 2 Tbs. chopped fresh mint
  • 2 Tbs. rice vinegar
  • 1/4 cup (2 fl. oz./60 ml) extra-virgin olive oil
  • Sea salt and freshly ground pepper, to taste

Directions:

Using a mandoline or potato peeler, shave cucumbers lengthwise into thin ribbons. Thinly slice the onion. In a bowl, toss the cucumbers and onion with dill, mint, vinegar and olive oil. Season to taste with salt and pepper and serve immediately. Serves 4.
