
Ice-Blended Matcha Latte
With just a sixth of the caffeine of coffee, matcha is a great alternative to the standard morning brew, especially if you want to stay alert without getting the jitters. Though we still love coffee and always will, matcha has antioxidants and amino acids that can help you focus and sustain energy throughout the day. If you’re a newcomer to matcha, this rich and creamy drink is the perfect introduction to this superfood. A single Medjool date — another antioxidant-rich ingredient — provides mellow sweetness, and we like to add some zucchini or spinach to the mix for a boost of vitamin C.
Ingredients:
- 1 1/2 tsp. matcha powder, or more to taste
- 1 cup (8 fl. oz./250 ml) almond milk
- 1 Medjool date, pitted
- 1 cup (4 oz./125 g) ice
- A handful of fresh or frozen spinach, or frozen diced zucchini (optional)
- A few fresh mint sprigs, for garnish
Directions:
In a high-powered blender, combine the matcha powder, almond milk, Medjool date, ice and spinach or zucchini (if using). Cover and blend until smooth. Pour into a short tumbler glass, garnish with a mint sprig and serve. Makes 1 drink.
