- Use & Care
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
- Maintain the knife's cutting edge by regularly using a honing steel.
- Sharpen as needed. With regular use and honing, you should not need to sharpen your knife more than once or twice a year.
- Sharpen knife at home using a whetstone or knife sharpener, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

I occasionally sharpen it to make sure I get a nice, clean cut...but that is all I have ever had to do with this knife. I'm on this site today to order a second one so my daughter and I don't quibble over who gets "the good knife". Once again, the one I liked best of all was a Zwilling….my knife block is full of Zwillings because I always seem to like them the best! I especially like the Pro line with the angled bolster, which really makes a difference in holding the knife well during use. I had previously bought the Pro 8" chef's knife and love that one, so when I started looking at boning style knives I finally narrowed it down to this one and the Wusthof Classic Ikon. In the end, I just preferred how the Zwilling felt to hold and use (always good to test knives before buying). The handle is very substantial and comfortable, and the blade has just a bit of flex to it that works well for my purpose.
