You can use metal utensils!" Sure enough, this was a lovely non-stick pan. UNTIL...the coating started bubbling, it scratched, it peeled. I'm not sure how this happened- even though it claims to be safe for metal utensils, I never cook with metal as that goes against all my prior experience. It is unfortunate as it was a great pan with a solid weight and excellent non-stick properties. First - a caveat - I discovered that I'd been doing one of the cardinal sins with my previous Caphlon pans. . . I'd been using cooking spray! Gasp! That being said, I also learned that any kind of oil or fat used to fry with needs to be added to the pan while it is cold because it will prevent it from carbonizing. This pan works like a dream when it comes to cooking with no oil. This is truly the first non-stick pan I've used that I could flip an egg with no utensil. Even though the care and use of this pan states that metal utensils can be used and the pan can be put in the dishwasher, I've done neither. I've used silicone covered utensils and hand washed this pan. I wanted to wait until I'd used the pan for at least a month before reviewing; this pan was definitely a good purchase. I'm very happy with it and would buy it all over again. I highly recommend this pan for part of your cookware. It's well made, the nonstick surface feels quite durable and rugged, and it works beautifully with or without oil (not cooking spray!). I have two other Zwilling nonstick pans and they are wonderful...work very well with induction and are kitchen staples. We have now used the Forte twice and it simply lightly lightly cooks, say, chicken breasts even at higher settings. The breasts must be placed in the oven as they are pale yellow and barely cooked. After watching the video about the pan being used with a metal spatula, I was a bit wary of using metal in a non stick pan but I decided to purchase the spatula shown in the video. The pan is terrific but the first time I used the metal spatula, it did indeed scratch the surface and Sonoma is replacing it. The pan is very nice, quick to heat and easy to clean. Too early to comment on durability but overall we are very pleased. The 8 inch size is perfect for a couple of eggs or a small amount of meat or sausage. The non-stick works well and allows us to use very little oil. Vegetables also come out very well.
