I've never had this experience with other non-stick products/brands that I've owned(Berndes, Calphalon, Fissler). First - a caveat - I discovered that I'd been doing one of the cardinal sins with my previous Caphlon pans. . . I'd been using cooking spray! Gasp! That being said, I also learned that any kind of oil or fat used to fry with needs to be added to the pan while it is cold because it will prevent it from carbonizing. This pan works like a dream when it comes to cooking with no oil. This is truly the first non-stick pan I've used that I could flip an egg with no utensil. Even though the care and use of this pan states that metal utensils can be used and the pan can be put in the dishwasher, I've done neither. I've used silicone covered utensils and hand washed this pan. I wanted to wait until I'd used the pan for at least a month before reviewing; this pan was definitely a good purchase. I'm very happy with it and would buy it all over again. I highly recommend this pan for part of your cookware. It's well made, the nonstick surface feels quite durable and rugged, and it works beautifully with or without oil (not cooking spray!). After using them for a couple of weeks I noticed that on both pans there were spots on the edges of the pans where they has not been completely coated with the non-stick material. I chose, at the time, not to return them since there was no defects noted on the bottom and sides of the pans. I have noted recently that on the 8 inch pan that the rivets have become stained. Overall the pans have been worked well and I use them regularly. The finish is tough as nails, and I believe this is the toughest non-stick surface I've seen. The pan heats up quickly and has a nice heft to it. They warm quickly, cook evenly, clean up easily, and they look great. Food browns evenly and I use very (VERY) little oil; just a little for flavor, really. The pans area little heavy, but I like that. It shows they are solidly manufactured and will stand up to years of use.
