I used diced potatoes, carrots, onions and grated garlic with diced chicken thighs and about a cup of chicken broth with the coconut curry sauce. I added sautéed mushrooms before serving the dish with fresh cilantro garnish. Everyone loved it! I didnt follow the directions but seasoned the chicken thighs and legs with salt and pepper. I poured the sauce into the crock pot, added half a cup of heavy cream and then stirred the chicken into the sauce. 2 hours later we had a delicious dinner that everyone enjoyed. I used 4 legs and 4 thighs the first time but will add more chicken the second time around. I browned the chicken, added the sauce, and a can of diced tomatoes. I love spices, so I added more curry, red pepper flakes, and some garam masala. Used directions to make it in the oven.
