Unfortunately it doesn't stay white very long. it will yellow pretty quickly, and not a nice shade of yellow either. I really wanted this to work out, but have now relegated the ladle to live in a drawer and not out on the counter with the rest of my utensils. it makes me sad every time i see it. SO CLOSE W&S! But after looking for the right ladle for years - YEARS! - I ordered this one. I had no idea what I was getting, exactly, or what made this one special. I just needed a new ladle and had been looking. Ironically, a person at Sue la Table recommended the ladles at Williams Sonoma! So let me tell you what is so good about this one: the ladle bowl is FLEXIBLE. Not only does it work like a regular (and substantially sized) ladle, but it flexes so that you can softly "scrape" the bottom of the pot or bowl to get the last few drops. In that regard, it is like a combo ladle and spatula. I went out and bought a second one. Might keep it as a back-up or give it as a gift to my favorite fellow cook. One other feature that sets this utensil apart: the handle that narrows as it goes.
