This is so much better than my previous flat whisk that I purchased from a competing store. This is perfectly designed to make a roux and to scrape fond to make gravies and sauces. The handle is very comfortable and the tines are firm, yet flexible. The flexibility allows the whisk to be used with cookware that has high sides (like sauce pans and dutch ovens) because it is still efficient even when held at a more severe angle. This whisk is gentle on regular pans as well as non-stick ones. It doesn't "slosh" ingredients and, at the same time, keeps them from sticking to the bottom of the pan while the sauce simmers. If I need to whisk without a lot or aerating, or if I am mixing eggs as they cook in my non-stick low height, (one inch high) omelette pan, nothing spills out.
