- The Best Vanilla Ice Cream Recipe
In a heavy-bottomed saucepan, combine the milk, cream and 1/4 cup of the sugar. With the tip of a knife, scrape the seeds from the vanilla beans into the pan, then toss the pods into the pan. Place over medium heat and bring just to a simmer, stirring to dissolve the sugar. Remove from the heat and let steep for 20 minutes.
Meanwhile, in a large bowl, vigorously whisk together the egg yolks, salt and the remaining 1/2 cup sugar until the mixture falls in a thick, wide ribbon when the whisk is lifted. Remove the vanilla pods from the milk mixture and reheat to a bare simmer. Slowly add the milk mixture to the yolk mixture while whisking constantly. Pour the custard back into the pan and cook gently over medium-low heat, stirring often with a wooden spoon, until thickened enough to coat the spoon, about 3 minutes. Draw a finger across the spoon. The custard is ready if it does not immediately bleed back together. Strain through a fine-mesh sieve into a clean storage container, let cool to room temperature, then cover and refrigerate overnight.
Pour the chilled custard into an ice cream maker and freeze according to the manufacturer’s instructions. Transfer to a tightly covered container and freeze for at least 6 hours before serving. Makes 1 1/2 quarts.

Rated 3 out of 5 by Isabel from They changed the recipe I bought this mix over the years and I agree with a previous reviewer. The vanilla is not the same and I don’t like it. I guess I ‘ll keep one as a backup for when I’m not up to all the work but I will start making my own vanilla from now on. Bring the previous one back pleaseDate published: 2019-03-10Rated 4 out of 5 by Linda from A little disappointed this time I have purchased your vanilla bean ice cream starter for several years now and have always been pleased until my recent order. The starter was darker in color and, when frozen, remained dark, like coffee with creamer. Almost like chocolate. The taste was still wonderful but I was disappointed in the color since I had 20 guests to serve!Date published: 2018-10-30Rated 5 out of 5 by klloch from Sublime If you're not wanting the headache of making a custard etc...If you want ice cream in 30 minutes....this stuff is sublime!!!!Date published: 2018-06-10Rated 5 out of 5 by Mommynurse from Wonderful, Splendid Ice cream I purchased this ice cream a few months, and nd it's been sitting in my pantry. I finally decided to pull out the ice cream maker with the ice cream so I could give a try. The entire process only took about 30 minutes to make and the results were amazing. This ice cream is better than most well known brand ice creams. I left speechless after I the initial taste, OMG!!! I will be purchasing this ice cream a million more time, and I will be trying a few other flavors as well. This incredible ice cream starter. It could not be easier. It also has an incredible flavor. My favorite is the vanilla. I have tried several different flavors and they have all been good. I also add vanilla bean paste when I'm making the vanilla, delicious!!Date published: 2017-08-09Rated 5 out of 5 by Carly from To die for! I bought the vanilla Ice Cream Starter when I purchased my ice cream maker. Last week, I used it for the first time and was amazed at the creamy, rich taste. Not only was I impressed, but my husband, who stays pretty low-key, pronounced it "awesome!" - a rave review! You want to try this, but don't buy it all - leave some for the rest of us!Date published: 2017-07-14Rated 5 out of 5 by ScottishTerrierLover from Excellent This starter makes wonderful thick and creamy vanilla ice cream. It's better than any brand I've bought in the grocery store. We prefer to eat it straight from our Cuisinart Ice Cream Maker as we favor a soft serve consistency. I've been playing around with add-ins and have hit on a favorite of caramel topping and chocolate covered toffee bits added in several minutes before the ice cream is ready. I keep several of the flavors stocked when on sale.Date published: 2017-06-26Rated 5 out of 5 by Lilly1 from Delicious flavor The best flavor! It is much better than the store bought ice cream. The whole family loves it. Will definitely buy more.Date published: 2016-12-05
I bought this product and a Cuisinart ice cream maker to use Christmas with my grandchildren. So I am prepared how much heavy cream and half and half will I need per quart. Do all the flavors require the same ingredients be added. Any thing else I’ll?Hi Purpleberry, Exact amounts will vary by flavor, but each requires a total of 3 cups of milk product to make each batch. Example: 1.5 c each Heavy Cream and Half & Half, or 1 cup each: Whole milk, Half & Half and Heavy Whipping Cream.Date published: 2018-12-24
