A quarter of a century of traditional aging gives this ultra-versatile condiment an intense, complex flavor. Balsamic vinegars like this one are among the most prized of Italian elixirs, crafted from the pure wine must (unfermented grape juice) of white Trebbiano grapes, which is aged in wooden barrels according to time-honored techniques. From Modena, Italy, ours is made by slowly simmering the grapes in copper cauldrons, then combining the reduction with older balsamic vinegar to help speed acidification. The blend is transferred to oak barrels, which imbue the aged vinegar with rich aroma, flavor and color.

Given the quality and size of the boytle, it's not unreasonably priced. After trying several "gourmet" aged balsamics, this one is hands-down the best. I've grown heirloom tomatoes in the garden for several years and nothing tastes better with them than this stuff, along with some great olive oil, basil, fresh ground pepper, basil, and Maldon salt. What % acidity? What is the producer's member number in the Consorzio Tutela Aceto Balsamico di Modena (Consortium for protection of Balsamic Vinegar of Modena)]“the best” balsamic has a label/rating of DOP, and is commonly sold at around $200 per bottle. How can people comnent this is “the best” if they are aware of nature of balsamic vinegar. 25 years does relate to quality BUT there are many other factors. so does this have a DOP or a IGP (the lesser)? only DOP is “the best”.
