- Spring Pea Soup Recipe
In a sauté pan over medium heat, warm 2 Tbs. of the olive oil. Add the shallots and cook, stirring occasionally, until softened, 3 to 5 minutes. Add the garlic and cook, stirring, for 1 minute. Transfer the shallot mixture to a Vitamix blender and add the peas, stock and mint leaves. Slowly bring the Vitamix up to full speed and blend until the soup is hot, about 6 minutes. Season the soup with salt and pepper.
Meanwhile, preheat an electric panini press on the “panini” setting according to the manufacturer’s instructions. Place the bread on a work surface and brush with the remaining 2 Tbs. olive oil. Turn 4 of the slices over and spread each with 1/2 Tbs. mustard. Top with the ham and cheese, dividing evenly. Cover with the remaining bread slices, oiled side up.
Place 2 of the sandwiches on the preheated panini press, close the lid, and cook until the bread is crisp and the cheese is melted, about 4 minutes. Transfer the sandwiches to a cutting board and cut in half. Repeat with the remaining sandwiches.
Pour the soup into bowls and garnish with crème fraîche and slivered mint. Serve the sandwiches alongside. Serves 4.

We’ve never had anything better than an old plastic blender before so I was a complete novice when we got it. After actually using it for awhile I’m glad we bought it. Since I had no experience with such a machine I diligently followed the instructions. After not having any problems for sometime I understood the process and began to experiment following the same idea of sequences. This has been fun as well as delicious. My wife is a fruit and veggie kind of person and we were always tossing out stuff that got too old before we could use it all up. Now I see what needs to be used and that becomes part of the mix. But I build it according to the instructions. Outside of the machine not working when turned on the only issues I think come from operator error. I do clean it right after use because when the stuff dries it is harder to get off but the process takes a few minutes. Follow the directions and have fun with it. My professor in medical school used one to demonstrate during our nutrition classes. I had to wait 8 years to get one. After 2 weeks of use this is what I have noticed about the Vitamix in comparison to my 4 year old Ninja prep system. The Vitamix is much quieter. My neighbors never know when it is in use. It doesn't require much "pre-chopping" prior to loading. You remove the seeds and plop them in. In less than 45 seconds I can achieve a smooth, creamy and texture but it took about 5-10 minutes in the Ninja....sometimes I never got it right. Washing the Vitamix is a breeze but particles would stick in tiny nooks and crannies of the Ninja. The Vitamix blade area is stationary and cleans easy whereas the Ninja blade is removable, tiered and you can easily injure yourself trying to remove it for cleaning. The Vitamix lid pops off easily while the Ninja has to be positioned a certain way then locked in place. With the vitamix you can remove the central lid and pour items directly into the center. In the Ninja the flap is on the side and you end up having to remove the lid and stir things up. The Vitamix doesn't require turning and locking the pitcher into a specific location. The Vitamix has a self cleaning feature too. The tamper is a blessing! I will return for another review after I've had this a bit longer. It takes 20 minutes to chop & make a homemade Caribbean marinade we use almost daily in the Ninja but with Vitamix it was less than 2 minutes.....just wash and drop into the pitcher and voila! This is my first vitamix so I have no idea how it compares to other models, but it is definitely much louder than my old kitchenaid.
