  • Sausage, Apple and Cranberry Stuffing: Pork sausage, apples and sweet cranberries mixed with chunks of white bread.
  • Butter Chive Mashed Potatoes: Creamy mashed Yukon potatoes folded with rich buttermilk and chives.
  • Bacon Macaroni and Cheese: Elbow macaroni blended with a rich sauce of bacon and four kinds of cheese – cheddar, Swiss, Gouda and Parmesan – and topped with crunchy panko bread crumbs.
  • Traditional Green Bean Casserole: Fresh green beans tossed in a smooth, creamy Gruyere cheese sauce topped with crispy golden fried shallots.

Use & Care

Receiving Instructions

  • The turkey ships fresh with ice packs to arrive chilled. Immediately upon receipt, refrigerate or freeze the turkey in its vacuum-sealed bag. It will keep for up to 5 days in the refrigerator or for up to 3 months in the freezer.
  • The sides and pies ship frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands.
  • Place the sides and pies in the freezer, where they will keep for up to 3 months.

Turkey Preparation

Proper Thawing

  • If frozen, remove the turkey from the freezer. Place the sealed bag in the refrigerator and let thaw for at least 48 hours.

Before Roasting

  • Remove the turkey from the packaging. Rinse under cold running water and pat dry with paper towels. Place the turkey, breast side up, on a rack in a roasting pan, and let stand at room temperature for 1 hour. Season as desired.

Roasting an Unstuffed Turkey

  • A turkey is easier to prepare and roasts more evenly and faster if left unstuffed; the stuffing can be baked separately. For an unstuffed turkey, roast at 400°F for 30 minutes, then reduce the oven temperature to 325°F and continue roasting until done, allowing 13–15 minutes per pound, approx. 2 hours 45 minutes to 3 hours 15 minutes total.

Testing for Doneness

  • The breast and thighs must reach different internal temperatures for ideal doneness. The breast should register 165°F and the thigh should reach 175°F. Begin testing for doneness 30 minutes to 1 hour before the total roasting time is reached. To test the breast using an instant-read thermometer, insert it into the meatiest part, several inches above the wing. To test the thigh, insert the instant-read thermometer alongside the opening of the main cavity underneath the drumstick, away from the bone. This is the meatiest part of the thigh.

Roasting Tips

  • The turkey will continue to cook internally after you remove it from the oven, so you may take it out when the thermometer registers 3°F to 4°F below the minimum temperature.
  • After removing the bird, cover it loosely with aluminum foil and let rest for 20–30 minutes to allow some of the juices to be absorbed back into the meat, which makes it moister and easier to carve.

Side-Dish Preparation

  • Sausage, Apple and Cranberry Stuffing: Keep frozen until ready to bake. Preheat oven to 375°F. Remove plastic wrap from tray and place on a lined baking sheet. Bake for 45–55 minutes or until heated through. Rest for 2 minutes before serving.
  • Butter Chive Mashed Potatoes: Keep frozen until ready to bake. Preheat oven to 375°F. Remove plastic wrap from tray and place on a lined baking sheet. Bake for 50–55 minutes or until internal temperature reaches 165°F. Rest for 2 minutes before serving.
  • Bacon Mac & Cheese: Keep frozen until ready to bake. Preheat oven to 375°F. Bake until the internal temperature reaches 165°F, approx. 45–55 minutes, and the top is golden and bubbly.
  • Traditional Green Bean Casserole: Keep frozen until ready to bake. Preheat oven to 375°F. Remove plastic wrap from tray and place on a lined baking sheet. Bake for 48–55 minutes or until internal temperature reaches 165°F. Rest for 2 minutes before serving.
  • Sweet Yam Casserole: Keep frozen until ready to bake. Preheat oven to 375°F. Remove plastic wrap from tray and place on a lined baking sheet. Bake for 48–55 minutes or until heated through. Rest for 2 minutes before serving.
  • Brussels Sprouts: Preheat oven to 375°F. Remove plastic wrap, place bacon packet to the side, and place oven-safe tray directly onto a lined baking sheet. Bake for 40 minutes, then add bacon to the top of the dish and continue baking an additional 5 minutes or until completely heated through.
  • Parker House Rolls: Remove plastic wrap from roll trays and cover the trays with a piece of parchment paper. Let rolls rise in the tray at room temperature for 8 to 10 hours. Preheat oven to 375°F. Remove parchment paper and lightly brush tops of rolls with egg wash (1 egg beaten with 1 tsp. water). Bake rolls in tray until tops are browned, 20 to 22 minutes. Let cool for 5 to 10 minutes before serving.
  • Gravy: Thaw overnight in the refrigerator then heat in a saucepan over a medium-low burner. Stir constantly to prevent burning then remove from heat after bringing to a boil and serve.
  • Cranberry Chutney: Thaw in the refrigerator overnight. Serve chilled or at room temperature.
  • Pumpkin Pie and Pecan Pie: Thaw in the refrigerator overnight. Serve at room temperature.
