Dry aging is the secret to the rich, meaty flavor and buttery texture of these bone-in fillet steaks from Strassburger, a 150-year-old family-owned New York butcher that supplies some of the country’s top steakhouses and restaurants. The USDA Prime meat is expertly dry aged for three weeks at Strassburger’s onsite facility, a process that concentrates natural flavors and tenderizes the meat. The beautifully marbled steaks are delicious grilled or broiled.
- Four 1 1/2”-thick bone-in steaks; 14 oz. each (serves 4).
- Shipped frozen.
- Product of USA.
- Use & Care
- The steaks ship frozen with ice packs. Upon receipt, place the steaks in the refrigerator or freezer for a later date. The steaks will keep refrigerated up to 3 days unopened and up to 3 months frozen.
Proper thawing technique
- Remove the meat from the freezer and thaw in the refrigerator overnight. To retain more of the natural juices, leave the meat in its original packaging while thawing. It is normal for natural juices to accumulate. Simply pat dry with paper towels before cooking.
