Staub's innovative enamel coating takes cast-iron cooking to the next level with improved performance, style and durability. This universal pan features a large cooking surface and high sides to contain splatters – ideal for frying, sautéing and searing as well as braising and slow simmering.

- For best results use low to medium heat.
- When using high heat, bring your pan slowly to a high temperature.
- Use plastic, wood or nylon utensils only; metal utensils may damage the enamel.
- Enamel may chip or crack if banged against a hard surface.
- Handles and knobs can become very hot. Always use a potholder or glove when handling.
- Allow pan to cool before washing.
- Dishwasher safe.
- Stubborn stains can be removed by soaking your pot for a few minutes in hot, soapy water.
- Completely dry pan before storing.
- Avoid using steel wool, steel scouring pads, harsh detergents, bleach or abrasive cleaners.

Staub traces its origin to the Alsace region of France, where founder Francis Staub designed his first enameled pot while working in an old French artillery factory in 1974. With the goal of creating the perfect pot for cooking the region's traditional hearty soups, stews and braises, he combined cast iron, the most popular material of the time, with the latest enameling technology available. Today, Staub still makes its cookware at a traditional atelier in France, casting each pot in an individual sand mold, which is heated to 800°F and destroyed after use. The exterior enamel coating is made with glass powder and mineral pigments, applied in two or three coats to generate brilliant glossy colors.

My traveling companions thought I was crazy to take time out from my vacation to buy this beauty--But they are the crazy ones for not getting one also! I leave it out on my stovetop 12inch burner and it is always ready to go. I have 3 men that have Texas sized appetites & this pan only cooks enough for 4 people if they have light appetites & they don't want left overs. Good thing I ordered 2..lol! But I was really looking for just one pot that'd do it. I HATE spending precious time washing more dishes than I have too. I'd far rather spend that time enjoying the ocean with my family. I just ordered a huge cocotte and am hoping it'll work for me. I do love this pan, just not the size. The lid is nice and roomy, yet not heavy. I have glass plates that weigh more. I have many staub pans but not one large enough for searing meat, I may try the 13.5 inch fry pan next. I also have every color of the pumpkin cocottes & multiples of the orange. They are beautiful to serve sides for the holidays, but not very big. The Staub Universal Pan was my first piece of Staub cookware and I bought it because it is compatible with my glass stovetop. Perfectly smooth on the bottoms and have never scratched my glass top. I have replaced all my cookware, except for my sauce pans and turkey roaster with Staub because it is absolutely the best cast iron by far, beats the heck out of the LC brand. The Universal Pan and the 13" Paella Pan are the most used pans in my kitchen and are also my favorites to give as gifts. I am more than happy with the cast iron pan! I sealed it by heating up equal parts of vinegar and water and letting it rest for an hour. Then drained and dried the pan and placed 3 tbl. of flaxseed oil inside and applied it to the surface. Flaxseed oil is edible food grade linseed oil. It sealed the surface and it works beautifully. I do use olive oil, butter, coconut oil when cooking. Nothing sticks. I cooked eggs, pork, chicken, beef. If anything is slightly stuck, a bit of baking soda or barkeepers friend removes it. Be sure to follow written instructions on this pan, meaning let it heat up and cool down gradually. The only fear is the glass lid breaking as I doubt they will replace it. Can you roast whole chicken leg quarters in this pan? Or is it best using Staub Cast-Iron Oval Gratin Baking Dish? Someone mentioned this pan marred when making chicken in the review.You can roast chicken leg quarters in the Deluxe pan. If done properly, it will not damage the pan as it's oven safe up to 500°F.Date published: 2019-11-26
Is the diameter of 11 1/4 the same at the bottom of the cooking surface as it is when measuring across the top of the pan?No, I wish. The sides aren't completely straight and it curves towards the bottom of the pan causing it to narrow. The top of the pan (opening and lip) measures 11 1/4 inches, the bottom interior cooking surface is only 9 1/2 inches. It isn't 11 inches. The only way they could've gotten an 11" measurement is if they measured the EXTERIOR of the pan and included not only the flat bottom but also the curved sides. This was a bit disappointing to me as I thought the cooking surface would be larger. I do love the pan but it really isn't for a large family. It barely fits enough meat for 4 people with no left overs. Not the Texas sized pan I was hoping for!Date published: 2019-08-23
