Use & Care


  • Ideal for use on any cooktop, including induction; not recommended for glass stove tops.
  • Oven and broiler safe up to 500°F.
  • For best results use low to medium heat.
  • When using high heat, bring your pan slowly to a high temperature.
  • Use plastic, wood or nylon utensils only; metal utensils may damage the enamel.
  • Enamel may chip or crack if banged against a hard surface.
  • Handles and knobs can become very hot. Always use pot holder or glove when handling.


  • Allow pan to cool before washing.
  • Dishwasher safe.
  • Stubborn stains can be removed by soaking your pot for a few minutes in hot, soapy water.
  • Completely dry pan before storing.
  • Avoid using steel wool, steel scouring pads, harsh detergents, bleach or abrasive cleaners.

Return Policy

At Williams Sonoma, we take great pride in the quality and craftsmanship of our products. Attention to design, materials, safety and construction are our priority. Upon receipt, please inspect your purchase and notify us of any damage; we will arrange for a prompt replacement.

If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

More about Staub

Staub traces its origin to the Alsace region of France, where founder Francis Staub designed his first enameled pot while working in an old French artillery factory in 1974. With the goal of creating the perfect pot for cooking the region's traditional hearty soups, stews and braises, he combined cast iron, the most popular material of the time, with the latest enameling technology available. Today, Staub still makes its cookware at a traditional atelier in France, casting each pot in an individual sand mold, which is heated to 800°F and destroyed after use. The exterior enamel coating is made with glass powder and mineral pigments, applied in two or three coats to generate brilliant glossy colors.

I found this brief article where this celebrity chef called this item his "go to" pan for cooking fish. His instructions, as I recall, were to heat the pan on the stovetop until it was screaming hot (I start heating the pan on medium-low for a few minute, then crank it up to high), put a little oil to coat the bottom plate, place the fish skin side down, cover the plate, and reduce the heat to low (if thick filet), or completely off (if thin fillet). 11-15 minutes later, it's done. (You don't have to flip the filet.) The fish was juicy and the skin was crispy. Love this pan! I actually bought a second one for when I have to cook for a lot of people, so I can can make two batches at once. (I can usually fit two medium-sized fillets in one batch.) I cook Mediterranean sea bass, and it is perfect every time. For crispy skin, pat dry the skin with a paper towel before putting it on the fish plate. Clean up is easy. This purchase introduced me into the world of Staub. I'm becoming a big fan of Staub, and lately, my LeCreuset cookware has not been used as much. The cost is admittedly a bit pricey for me to have this single purpose, specialty pan (admittedly, I could use this for other food, but I don't want to risk the food taking on a fish aroma), but it's worth it to me. I love the results; cooking fish was never so easy; oil was minimal; and my kitchen did not reek of fish afterward. Bon appétit.

Also I bought the one with "visual imperfection", which turns out 3 Convex on the rim of the pan (@3 sides). The lid cannot be closed/sealed properly, never. I was very disappointed and shipped it back today.

    Rated 5 out of 5 by from OMG Fish IS Perfect I bought this to cook my flounder & cod in it. I place the fish in put buttered panic crumbs on top salt & pepper it & cook for 20 minutes. The fish turns out perfectly flaky & moist. I also use it to roast asparagus & peppers.

    Rated 5 out of 5 by from Beautiful and functional This is beautiful. I ordered the fish handle to go with it. Staub is the best in my opinion. It heats up super fast and cleaning is a breeze. I used for two large portions of cod and my fish came out juicy and delicious. Used for two huge chicken breast and cooked at the same temp and time as I normally do with a glass baking dish with beautiful results again. Perfect for a family of two to three. Get the large oval wood trivet to go with it, so worth every penny.
