- More about Staub
Staub traces its origin to the Alsace region of France, where founder Francis Staub designed his first enameled pot while working in an old French artillery factory in 1974. With the goal of creating the perfect pot for cooking the region's traditional hearty soups, stews and braises, he combined cast iron, the most popular material of the time, with the latest enameling technology available. Today, Staub still makes its cookware at a traditional atelier in France, casting each pot in an individual sand mold, which is heated to 800°F and destroyed after use. The exterior enamel coating is made with glass powder and mineral pigments, applied in two or three coats to generate brilliant glossy colors.
Rated 5 out of 5 by DBorlando from Beautiful and Functional Not only is this great for steaming, baking and/or top-browning fish, it’s also nice as a warming plate for side dishes, and smaller-sliced breads. This can actually be an everyday piece because of it’s versatility.Date published: 2018-04-29Rated 5 out of 5 by 7EmceeGee from Love this fish pan! I was looking online for tips for best cooking fish. I found this brief article where this celebrity chef called this item his "go to" pan for cooking fish. His instructions, as I recall, were to heat the pan on the stovetop until it was screaming hot (I start heating the pan on medium-low for a few minute, then crank it up to high), put a little oil to coat the bottom plate, place the fish skin side down, cover the plate, and reduce the heat to low (if thick filet), or completely off (if thin fillet). 11-15 minutes later, it's done. (You don't have to flip the filet.) The fish was juicy and the skin was crispy. Love this pan! I actually bought a second one for when I have to cook for a lot of people, so I can can make two batches at once. (I can usually fit two medium-sized fillets in one batch.) I cook Mediterranean sea bass, and it is perfect every time. For crispy skin, pat dry the skin with a paper towel before putting it on the fish plate. Clean up is easy. This purchase introduced me into the world of Staub. I'm becoming a big fan of Staub, and lately, my LeCreuset cookware has not been used as much. The cost is admittedly a bit pricey for me to have this single purpose, specialty pan (admittedly, I could use this for other food, but I don't want to risk the food taking on a fish aroma), but it's worth it to me. I love the results; cooking fish was never so easy; oil was minimal; and my kitchen did not reek of fish afterward. Bon appétit.Date published: 2017-05-14Rated 3 out of 5 by Julia from I bought it as my thanksgiving gift to myself and I like it. It's pretty while I present food on table, but I haven't find a lot of food I can cook with this product. Anyway, it looks gorgeous.Date published: 2016-12-27Rated 2 out of 5 by HZ23807 from Too small and too much imperfection The pan is very small and thin. When I got my fish in, the lid cannot be closed. Also I bought the one with "visual imperfection", which turns out 3 Convex on the rim of the pan (@3 sides). The lid cannot be closed/sealed properly, never. I was very disappointed and shipped it back today.Date published: 2016-12-25Rated 5 out of 5 by Fun With Food from Perfect size for 2 fish; or, fish for 2. Very happy with this pan. Even heat; solid construction; beautiful clean and streamlined design. Delicious results.Date published: 2016-09-06Rated 5 out of 5 by cookman1 from OMG Fish IS Perfect I bought this to cook my flounder & cod in it. I place the fish in put buttered panic crumbs on top salt & pepper it & cook for 20 minutes. The fish turns out perfectly flaky & moist. I also use it to roast asparagus & peppers.Date published: 2016-07-10Rated 5 out of 5 by alange from perfect fish It would be nice if this came with a recipe or instructions like my pressure cooker did. I modified en coccote recipes and it worked fabulously for halibut. 40mins @ 250F; just no peekingDate published: 2015-06-14Rated 5 out of 5 by Pickycustomer from Beautiful and functional This is beautiful. I ordered the fish handle to go with it. Staub is the best in my opinion. It heats up super fast and cleaning is a breeze. I used for two large portions of cod and my fish came out juicy and delicious. Used for two huge chicken breast and cooked at the same temp and time as I normally do with a glass baking dish with beautiful results again. Perfect for a family of two to three. Get the large oval wood trivet to go with it, so worth every penny.Date published: 2013-12-24
