Influenced by the Zen principle of simplicity, the Shun Kanso collection was designed with only the indispensable elements in mind: high-performance steel, a razor-sharp edge, perfect balance and precision handling. Plainly put: with this chef's knife, nothing is lacking and nothing is superfluous.
- Blade of highly refined, high-carbon vanadium stainless steel takes and holds a razor-sharp edge.
- Heritage-finish blade provides a rustic look that hides scratches and improves with age.
- Angled handle is made of dark tagayasan, an extremely dense wood traditionally used to make samurai sword handles.
- Handcrafted in Japan.
- Dimensions & More Info
- 8"-long blade; 5 1/4"-long handle; 6 1/2 oz.
- Full-tang construction for balance and strength.
- Bolsterless design.
- Handcrafted in Japan.
- Use & Care
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, your knife should not need sharpening more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

Rated 5 out of 5 by workingggirl from Incredible Knife This is the first knife that I've dropped a not-inconsequential amount of money on and it was worth every penny! I had been using the Victorinox 8" Swiss Army Fibrox knife someone gave me for a gift and was never really a fan of it, but wasn't sure anything else would be better. The Shun Kanso Chef Knife is very light and feels really good in your hand. It's impressive to look at and even more impressive to use. It would take me 5-10 minutes to chop some potatoes with the Fibrox, but the Kanso made short work of them in less than two. I am extremely impressed and would recommend this knife to anyone!Date published: 2018-02-22Rated 5 out of 5 by Kelybear7 from Shun Kanso Chef's Knife I have never owned such an expensive knife. I treated myself and I LOVE it. It does a great job! I need to buy more.Date published: 2015-11-17Rated 5 out of 5 by MattW from It's a Shun Definitely worth the money. That should be obvious as it is a shun. For relatively the same price you can get the noticeably sharper/higher maintenance Shun Classic. Owning both the classic chef and the kanso chef, I can say I don't feel half as bad using the kanso at both jobs. The solid AUS10 vs the sandwiched VG10 is much easier to keep clean and looking new, easy to put a wonderful edge on, and it holds quite well. Watching my classic do industrial work is like intentionally dirtying a priceless work of art. Both are excellent, impeccable if you ask me. If you want knives that get the job done and are a talking point for those around you, Shun is the way to go.Date published: 2015-08-15Rated 5 out of 5 by joey2025 from Best knife I have ever used Well balanced! Beautiful design! I had been using a Shun similar to the Shun Premier Chef's Knife, but I wanted something new, a new toy. The lady at WS said hey they have a new knife coming out you should try it. 10 seconds later i had a potato looking like french fries and i was sold. she put the order in and i was the first in the store to get one. I know its all about the usefulness of a knife, but when you get a knife that is full of usefulness and good looks its a win win. BUY THIS KNIFE, YOU WILL NOT BE SORRY!!!!Date published: 2015-05-11
Is the handle real wood or is it a plastic lookalike?Hi TreyL, The handle is made of a wood called tagayasan or wenge, which is sometimes known in Japan as “iron sword wood.”Date published: 2018-11-26
