- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, your knife should not need sharpening more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

It was packed well, arrived on time and was ready to "rock & roll" out of the box. If you own any Shun knives you already know about the legendary blade edge and super durable craftsmanship which would take pages to describe and evaluate. If you don't own Shun knife, pick one, anyone, and take it for a walk in your kitchen. These knives take the "work" and tedium out of cooking prep, less fatigue and frustration when you're done. Finally, be careful, these knives are sharp. A few friends and family members have learned the hard way after coming into my kitchen and helps by taking over a cutting job that these knives are very sharp! I find the belly of the knife too large to really quickly chop. It chipped after one use chopping onions. The blade is too fragile to put it through any serious chopping work on carrots, potatoes, celery, etc. If you're already comfortable rocking while chopping this knife is unnecessary. I find myself reaching for this knife over my chef or Santoku knives. Nicely balanced . . .and the rocking motion one can achieve with the exaggerated curve of the blade, makes quick and easy work of dicing. I use the same waxy polish and food grade mineral oil on the handles of my Shuns that I use on my cutting board to keep the wood well conditioned. The balance is exquisite. Just enough heft in the handle to power the work without fatigue. I bought the Kaji Rocking Knife sight unseen/felt. That was a not a good thing. The Rocking knife is too lightweight to do the job. It feels flimsy in the hand. The blade itself doesn't mince with ease. My old chef knife is better.
