Named Hikari after Japanese word for "illumination," this masterfully crafted, lightweight knife is distinguished by its red-tipped birch PakkaWood handle and "hornet's nest" pattern. - Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

For an additional charge of $26 per address, we can expedite delivery to most destinations. Orders received by 9:00 p.m. ET Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

Have been so impressed with this thing I purchased the 8" version and nearly a dozen models from other lines. The Hikari and Kaji are my favorites by a long shot. Appearance wise this gets top votes. I don't use this at work but it always gets compliments from house guests, especially fellow chefs. It even looks great in the block, the handle is striking, unique and comfortable. I buy knives for performance only but this thing is beautiful in looks and performance. Materials and performance couldn't be better. SG2 is my favorite steel, I think it can perform right there with carbon steel that Kramer used. There is a reason this steel costs a bit more. If you have experience sharpening knives you will notice the difference after taking this to a stone, and it holds that edge. If you don't sharpen yourself this thing still comes out of the box like a razor. Cons are minor. First is the cool pattern that makes it look cool just makes cleaning a bit of a pain with all those tiny lines for food to get stuck in. Second the profile of the 6" is not quite the same as the 8", it's a very flat tip that is strange feeling the first time you use it. Bought one for my dad for Father’s Day, and had to test it out myself. Really amazing profile, fit and finish is pretty good, patterning is beautiful, you could shave with it out of the box. But I am a bit concerned about the edge. It’s shown some micro chipping already, not sure if it’s from a bit of misuse as it’s not my knife. This 6" Hikari purchase wasn't entirely necessary but it slotted into a void in my chef knife size range and has immediately become the favorite knife in the kitchen. Well, my go-to might still be a 6" Shun Fuji but my wife reaches for this one first. This Hikari has a great hand-feel with its slightly smaller scale (compared to the Fuji), its late is thinner on whole for a silken smooth slicing action, and the Japanese edge is razor sharp as one would expect. And this blade is solid - it really feels like it will hold an edge over time. I've only been using it for a few weeks but it is showing no signs of use. I like the 6 so much that I have ordered the 8" chef - completely unnecessary but at the promo price it's a steal. So for comparison, the 6" Hikari is a little smaller in scale and overall blade length than the 6" Shun Fuji, lighter but still far more solid than say a Global or my 7" German santoku. And though its only been several weeks of heavy use and hand washing, there has been no discoloration of the light wood handle.Date published: 2017-05-02
