- Use & Care
- The salmon ships frozen with dry ice. Please take care not to touch the dry ice with bare hands. Freeze the salmon upon receipt. Keep frozen, up to 3 months, until ready to thaw and bake.
- To thaw the salmon, place in the refrigerator for 4 hours. Preheat an oven to 375ºF. Remove the salmon from the packaging and place on a parchment-lined baking sheet. Whisk together 1 egg and 1 tsp. water. Brush the pastry with the egg mixture. Bake until the pastry is golden brown and crisp, 45 to 60 minutes, rotating the baking sheet 180 degrees halfway through baking. Let cool for 10 minutes, then transfer the salmon to a platter and serve.

Rated 5 out of 5 by MandyJane from Ordered this twice - both times excellent Served this for a group of 8 in December and it was delicious. The only concern I had was that the portions were small. This time I served it for four and it was more than enough. I prefer having lots of food so that people can take whatever they want and keep taking more. I'd actually say that this serves 6 easily. Salmon was delicious. Easy to cook. Comes out golden brown. Stays warm well. Served with a big salad and that was enough. While the price is high, it is a lovely fancy dish and easy so you can spend time with your guests and not on the food.Date published: 2017-04-10Rated 4 out of 5 by CarolinaKat from Handy Entree This Salmon Florentine was the second entrée at Christmas, paired with Beef Wellington. The salmon was tender and delicious and the prep was simple. The filling was too heavy on the garlic, which satisfied the garlic-lovers in the group, but was off-putting to some. I gave it four stars for that reason. I found it delicious and will order it again.Date published: 2017-01-13Rated 1 out of 5 by CateW from Not very good Honestly, I didn't really care for it, the pastry was good, but the salmon was dry and the taste was off putting. I really wanted to like it but sadly, it didn't work out.Date published: 2017-01-02Rated 5 out of 5 by Gickchen from Perfect every time ! My go to meal for guests. Never been disappointed. I do serve it with a hollandaise sauce so.Date published: 2015-03-26Rated 5 out of 5 by ellemich8 from Perfect for entertaining I hosted a Chinese New Year dinner and served this as one of the courses (It's not an Asian entree, but it was my take on a 'whole fish'). The entree was a hit. Many of my friends had never tasted a Salon En Croute before and loved it. Tips: The recommended baking time is 45-60 minutes. We baked it for 45 minutes and let it sit. It came out perfect.I was concerned that we needed a sauce, but the sauteed spinach filling had enough seasoning and flavor, that a sauce was not needed.Date published: 2015-02-23Rated 4 out of 5 by Latenightshopper22 from Family favorite This dish makes it to my table every Christmas Eve. It's wonderful. The crust is flaky and the prep time is non existent. My only complaint, if this can be considered a complaint, is that there is so much salmon in the pastry that it overpowers the spinach filling. My kids have started taking out some of the salmon and placing it in separate plates to "save" in the fridge for later. This only happens in the center of the shell so I usually cut from both sides to serve. I have not encountered the "fishy smell" that other reviewers have complained about. This easily feeds six people and with other goodies on the table you will probably have leftovers. I always purchase after thanksgiving when it goes on sale. I highly recommend.Date published: 2015-01-23Rated 3 out of 5 by ChefBandK from Special Occasion Dish This is the second year we ordered the salmon for the holidays. It was still good this year the only con would be not to overcook it as tended to be a little dry. We personally would make a sauce to go with it-such as a hollandaise, etc. Everyone enjoyed it-as we had other fishes it was not the main course.Date published: 2015-01-14Rated 5 out of 5 by oldschool from Great for entertaining on short notice We eat salmon 4 days per week, and were not disappointed with this product. It is our go to dish for impromptu dinner guests (four hours notice). Never had a bad one and never any leftovers. I have purchased this product several times and have two in the freezer now. Just follow the directions, or thaw a little longer than the directions. Really depends on how cold it is frozen. Our freezer is calibrated at -20 F. Most important, use a temperature probe as the cooking time seems to vary quite a bit. Moist and delicious, but beware if you do not like garlic.Date published: 2015-01-10
