The warm, spicy flavors of classic Indian curries gave us the idea for this autumnal sauce. We’ve combined sautéed chunks of pumpkin and tomato with caramelized onions and fire-roasted serrano chilies. Coconut milk adds creaminess and complexity, highlighted by ginger, garlic and sweet garam masala spices. Ingredients are slow-simmered in small batches to create a rich, nuanced sauce. Recipe included.

- Water, pumpkin puree, tomatoes (diced tomatoes, tomato juice, citric acid, calcium chloride), onions, coconut milk (coconut extract, water, xanthan gum, carrageenan, guar gum [natural emulsifier]), tomato paste, dried onion, salt, cane sugar, soybean oil, candied ginger (ginger, cane sugar), distilled vinegar, spices, garlic, curry leaves, extractives of paprika.

I braised some chicken tenderloins and set it aside. Then sautéd onions then garlic and poured the sauce stirred then added the chicken. Simmered the sauce for about 20 minutes. I also parboiled some small white potatoes and added them at the end. Served with sautéd spinach. Dnner done in 30 minutes! The sauce was full of flavor with a gentle kick of spice. Bought my first jar last fall, and I just got around to using it. I could kick myself for not buying more. If you bring it back, I promise to buy lots more! The best part, it's DAIRY FREE (uses coconut milk), so it makes for a happy tummy. I really like that it's not spicy either (I'm not a fan of hot foods). :-) I added potatoes, onions and chicken to the sauce and ate it with garlic naan bread and coconut rice.
