Sous vide is a technique that slowly cooks vacuum-sealed foods in a water bath, bringing them to temperature gently to prevent overcooking and create incomparable texture. Our immersion circulator offers the same precise temperature control as the professional models used by restaurants, but does so with a quieter motor.

- Do not let circulator come in direct contact with food. Use with approved boilable bags.
- Do not immerse entire unit in water.
- Unplug unit before removing it from the water.
- Allow to cool before removing from cooking vessel.
- Clean by rinsing and drying thoroughly.
- Wipe housing clean with a damp cloth.
- Do not use abrasive cleansers.
- Depending on use and water hardness, scale and mineral buildup may occur. Clean by filling a pot with a solution of vinegar and water and running the circulator for about 30 minutes.

For an additional charge of $17.50 per address, we can expedite delivery to most destinations. Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

Rated 1 out of 5 by NickUrfe from Multiple Malfunctions – No Accountability I bought a Polyscience Creative four years ago, and after about two years of use, an overheating wire caused a short circuit. Given the cost of the unit compared to other circulators on the market, I was really upset. Polyscience paid for the repair, promising to upgrade the unit if I experienced another problem. Two weeks ago, my unit shorted AGAIN: the exact same wire in the same location, in spite of Polyscience adding insulated sleeves to the wire. There's clearly a design problem here, with this happening twice to me, and being well-documented by other reviewers. Well, Polyscience reneged on its offer for an upgrade and insisted on charging me almost $200 for the repair. Given the cost of this unit, I would recommend that you buy two Joules or Anovas, where each company is well-regarded for its customer service, than to waste your money on a product destined to break and to cost you the price of one of the other units in repairs. After a month of use the electrical cord started to short out and it stopped working. Replaced by SW. After another few weeks of use, the case started to warp and the seams opened. This time I contacted PolyScience and after sending them photos of the warping case and a purchase receipt, they accepted it back and sent me a replacement which has been performing well for the past six months. If you look at customer reviews on Amazon you will find that many purchasers have had similar mechanical failures with this machine. Unfortunately, the second one started smoking 9 months after we bought it. Fortunately, it blew a breaker and shut off. This unit is not designed to be used for more than 12 hours at a time.This is unfortunate, because some recipes require sous vide cooking at up to 72 hours. So, if you want to make a nice Osso Bucco that cooks for 72 hours, this is not the machine for you. At this price point, it doesn't make much sense to buy this if it only lasts 9 months. I love the fact that you can just clamp it on to whatever container is appropriate for what you are doing. It's easy to use, straightforward, it's an elegant design, and the accompanying documentation is clear and concise. It is easy to use, easy to clean and stores easily. I also bought him the Modernist Cuisine book which has many recipes that use sous vide. I previously used a makeshift sous vide set up (digital temperature probe and pot of water on the stove). That worked fine but needed constant attention to maintain the correct temp. After tasting how delicious everything was using this technique, it was an easy justification to buy the Polyscience Sous Vide unit. The first unit we received failed on the second use but WS was great about sending a replacement right away! We've used for so many wonderful dishes along with our Ary Chamber Vacuum (spring for the chamber vac sealer BTW!). I couldn't be happier and am wowing dinner guests.
