Summary

Master pastry chef Jean-Yves Charon prepares our classic and chocolate croissants in the traditional French style, using butter and ultrathin layers of yeast dough, laboriously folding and cutting the pastry by hand. The chocolate croissants are further enriched with a filling of premium chocolate from renowned Belgian maker Callebaut. Preparation for you is simple: allow the croissants to rise overnight, then bake and enjoy warm from the oven at their flaky, buttery finest.

Receiving instructions

  • The croissants ship frozen with dry ice. Please take care not to touch the dry ice with bare hands. Upon receipt, remove croissants from the shipping container and place in the freezer, where they will keep for up to one month.

Preparation

  • Place the frozen croissants, rounded side up, on a nonstick or parchment-lined baking sheet. Cover loosely with a sheet of parchment paper. Let rise at room temperature (68° to 72°F) for about 9 hours or overnight. The plain croissants should measure approximately 4 1/2” wide and 2 1/2” high. The chocolate croissants should measure approximately 3 1/2” wide and 2 1/2” high. Preheat an oven to 375°F. Remove the top parchment paper. If desired, lightly beat 1 egg with 1 Tbs. cold water and, using a pastry brush, brush the croissants with the egg wash. Bake the croissants until golden brown, 15 to 20 minutes.

  • Rated 1 out of 5 by from New directions need to be changed back I have bought these croissants many times for my family and as gifts. I recently bought them and cooked within a week of arrival. This time I noticed the directions did not say that the croissants should be left out to rise for 9 hours. I was a little skeptical but decided to follow the directions as indicated. The croissants were terrible compared to the fluffy, flakey croissants I have come to expect. Please revise the directions so others don't have subpar croissants; if the recipe has changed and the directions aren't the problem, you can be sure I will not purchase these anymore. That would be too bad because this used to be one of the best products on the market.

I have been ordering croissants from Williams Sonoma for many years.I have always ordered the plain croissants but decided to try a combination of plain and chocolate.The chocolate croissants were absolutely amazing!!! I loved them so much that I sent a box to my Grandaughter in the Air Force in N.C.She was surprised and thrilled too!!! A customer for life!!!

It's so fun to put out those little, frozen morsels, with the anticipation of what you'll find in the morning. Then, in the morning, you’ll find that they have grown 3 or 4 times their size. When you bake them, they grow even more. And when you sink your teeth into them, they melt in your mouth with the most increasable flavors you can imagine. I especially love the chocolate croissants. They look like they have way too little chocolate, but when you bite into them, you get wonderful chocolate in every bite. They are amazing croissants and I would recommend them to everyone who enjoys these types of pastries.

Puffed up much more than I expected. Made them for Christmas morning and my entire family loved them! Will be on our Christmas morning menu from now on.

    Rated 4 out of 5 by from Nice morning treat Beautiful and buttery croissants/pain au chocolat to have freshly baked for breakfast. If your house is cold at night, place them in a slightly warmed oven in the morning so they can rise more. Also I found if they were covered only with parchment paper as the instructions recommend, their surfaces get dried and this seems to hinder the rise.
