The signature pastry at chef Thomas Keller’s Bouchon Bakery in California’s Wine Country is the delicate little chocolate cake known as a bouchon (French for "cork"). Use this Nordic Ware pan in combination with our exclusive Chocolate Bouchon mix to re-create the delectable bite-size cakelets at home.

- Use & Care
- Before each use, wash pan with hot, soapy water.
- Oven safe to 400°F.
- Use only wood, silicone, plastic or other nonmetal utensils to avoid scratching the surface.
- For best results, brush pan with a nonstick baking spray with flour. Turn pan upside down and tap to remove excess flour. These steps will help ensure easy release and excellent pattern definition.
- When pouring in batter, begin with a small amount, making sure that the liquid fills in all of pan's details. Pour in remaining batter.
- To prevent overflow, do not fill more than 3/4 full.
- Gently tap pan on counter several times to release excess air bubbles from batter.
- After baking, cool on a wire rack for 10 minutes.
- To unmold, tap pan firmly a few times. Invert onto a cooling rack and lift pan away.
- Allow cake to cool completely before decorating.
- Hand-wash. Dry thoroughly.
- Do not use abrasive cleaners such as metal scouring pads, as they can damage the surface.
- A soft sponge or kitchen brush will remove baked-on food particles. You may need to scrub lightly.

I then bought a third one elsewhere (not in the exclusive Goldtone finish) and it had a similar issue, so regrettably, I've had to give up on owning this piece, though I've been happy with all the other Nordic Ware pieces I own. Nordic Ware seems to have production issues for this piece regardless of finish, alas. For bouchons try the silicone version from de Buyer that W-S sells. I made Bouchon for NewYears eve and they were a HUGE hit!! easy and easy to remove. Actually be careful because they FALL out and could break. The real reason I purchased the pan, was I was hosting a baby shower tea at a club who is known for their WONDERFUL popovers! Popovers were part of the menu, but since everything was miniature due to being a tea, I wanted mini popovers too. The chef said it would not work......So I purchased the pans, made a batch of popovers and took them to the chef and asked him to make them for the tea. He was shocked they were so good and MADE THE POPOVERS FOR ME!! I told him where to get the pans, and the catering director said he was going to put it on his wish list!!! BOOM! I just received this pan last week and have already made Thomas Keller's bouchons au chocolat in it once. They turned out phenomenal! My boyfriend told me they are the best chocolate thing he has ever eaten. The pan is great quality, sturdy and thick as well as a breeze to clean. I used a little nonstick baking spray in the pan before baking my bouchons and they came out no problem after they were finished baking. So yummy. I would definitely recommend to anyone thinking of getting this pan. I bought TK's cookbook and modified the Bouchon recipie by adding 1 Tbs of espresso powder and 1/4 c of creme fraiche to the batter. I used a pastry bag with 1/2 inch tip to pipe the batter in the pan. Quick, easy, and no mess! In minutes I had moist, rich bouchons! Hands down the BEST brownies I've ever had. Supposedly, at the actual bakery, they use a silicone mold. I prefer the heat-conducting properties of metal, and this was perfect. The edges of my Bouchons were chewy while this insides were baked-through but soft. The nonstick coating made these a breeze to unmold; I just sprayed with a little Baker's Joy before putting the batter in the pans. It does help to use a pastry bag to fill the mold.
