To pastry chef Jean-Yves Charon, a kouign amann tastes like home. From his native Brittany, this classic Breton “butter cake” relies on layers of handmade puff pastry dough to create a decadent treat with a sweet, buttery center and crisp caramelized-sugar coating. Hand made with the finest natural ingredients, the frozen pastries are simple to prepare—just let them rise overnight and bake. They emerge from the oven with crunchy, sugar-speckled exteriors, tender interiors and an irresistible buttery aroma.

- The kouign amann was shipped frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt, immediately place the kouign amann in the freezer, where it will keep up to one month frozen.
- Lightly spray the inside of each mold with nonstick cooking spray and place a kouign amann in each mold. Place the molds on a baking sheet and cover with a piece of parchment paper. Let the kouign amann rise in their molds at room temperature for 8 to 10 hours.
- Preheat an oven to 350ºF.
- Remove the parchment paper. Transfer the baking sheet to the oven and bake the kouign amann in the molds until slightly puffed and golden brown on top, 30 to 35 minutes. Let cool for 5 to 10 minutes before serving. Makes 8 kouign amann.
- Enriched flour (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid, enzyme, ascorbic acid [dough conditioner]), butter, sugar, water, yeast, salt, dough conditioner blend (wheat flour, malted barley flour, ascorbic acid [dough conditioner], enzymes).

However, my husband had been craving them after trying some in New York and decided to buy them for him. I bought these as well as the kouignettes, and they are both delicious! Some did not rise as much as the others, but after baking them, we kept them out for a little longer and then re-toasted them in our toaster oven. These larger ones did taste a little more like regular croissants than the kouignettes that got crispier and sweeter. These French pastries were as good as those I've had in French pastry shops. They rose beautifully in the recommended time (I put them in my oven with just the light on inside). They baked up to gorgeous perfection in the little cups provided (an added bonus). I do not understand the negative reviews at all. The pastry did not rise and smelled like very old oil. I've been enjoyed 4~5 kinds of Galaxy pastries for several years. It happens in 1 out of 10 boxes on average, but this time is the worst with this smell. The other 90% has been great, though. I usually call the customer service, but this time I decided to speak out, for other potential customers. The pastry was inedible. I threw them out all. It was not fresh at all! I purchased on March 20th 2017 and it delivered on 24th and "best by" date was March 29th 2017. Put immediately in the freezer per instructions. Thawed 10 hrs + no rise. Used baker tip warm 110 degree oven turn off, pan of boiling water on bottom rack. Baking sheet with pastries on upper rack. Wait 20 minutes or so. Some of the pastries rose, others stayed flat. Baked per instructions and tuned out good. Check them the final few minutes to avoid burning. The yeast must've been weak in this batch. I placed an order in late November and when I took them out of the freezer, they looked freezer-burned. They didn't rise at all and were hard disks when they came out of the oven. I thought maybe UPS had allowed them to thaw on the truck (the dry ice was intact, though) so I I placed another order. The second order was worse! I followed the directions, exactly as it was written, and rested it for 10 hours. These pastries did not rise at all, and were just as flat after 10 hours of "rising."
