Instant Pot Pulled Pork Starter Sauce

For the ultimate Southern-style pulled pork, our Test Kitchen chefs used our customers' favorite recipes to develop a savory, time-saving starter that helps make the most of the Instant Pot. Slow-simmered in small steam-jacketed kettles, this smooth, savory sauce combines fragrant smoke with a hint of tang and sweetness to re-create authentic barbecue flavor. Simply add a boneless pork shoulder and this time-saving starter to the Instant Pot. In less than an hour, you can enjoy a delicious hot meal.

Pulled Pork Recipe
4 lb. (2 kg) boneless pork shoulder, cut into 2-inch (5-cm) cubes
Kosher salt and freshly ground pepper
1 Tbs. vegetable oil
1 jar pulled pork starter
Season the pork with salt and pepper. In an Instant Pot set to Saute, warm the oil. In batches, sear the pork, turning occasionally, until browned all over, about 8 minutes per batch. Return all the pork to the pot and stir in the pork starter. Lock the lid in place, seal and set to cook at high pressure for 45 minutes. When pressure cooking is complete, let the pressure release naturally for 10 minutes, then quick release the remaining steam. Carefully remove the lid and, using tongs, transfer the pork into a bowl. Using two forks, shred the pork into bite-size pieces. Using a large spoon, skim the fat from the top of the sauce in the inner pot. Stir the pork into the sauce and serve.
